Pat the steaks dry
Season the steaks with salt and pepper
Make sure your EGG has been pre-heated - it needs to be really hot
Place Steaks on red hot Cast Iron Searing gate and close the lid
Cook for 3 minutes
Turn the steaks over and cook for a further 3 minutes for medium-rare or more for your desired doneness.
Leave to rest for 5 minutes before serving
