Rack of Lamb

The rack is the most exquisite part of the lamb. It is packed with the most flavor and when cooked correctly, is tender beyond belief. It is slightly more of an investment but will add specialness to any occasion. This is perfect for just 2 of you but can easily be prepared for a group.

  • Racks of Lamb 

Marinade

  •  salt 
  •  pepper 
  • clove garlic, finely chopped 
  • 2 tablespoons (30 ml) rosemary, finely chopped 
  •  rapeseed oil 
  • lemon, zested 
  • 2 tablespoons (30 ml) balsamic vinegar 

Instructions

Step 1

Place all marinade ingredients in a re-sealable bag or bowl and combine thoroughly

Step 2

Add the racks of lamb and leave to marinade for 2 hours

Step 3

Set the EGG for indirect cooking with the convEGGtor

Step 4

Add the racks to the EGG and cook for approx. 25 mins for Med Rare

Step 5

Leave to rest for 5 mins before serving
