Ingredients

  • Potatoes 
  • Package of Bacon 
  • Egg 
  • 1/4 cups (60 ml) Milk 
  •  Scallions (optional) 
  • 1/2 cups (120 ml) Mayo or Miracle Whip 
  •  Dizzy Pig's Raging River spice(optional) 
  •  Colby or Pepper Jack Cheese 
  •  Extra Virgin Olive Oil 
  •  Kosher Salt 

Instructions

Step 1

Heat Big Green Egg up to 400°F/204°C.

Step 2

Wash and coat with extra virgin olive oil and Kosher Salt then pop into the Big Green Egg.

Step 3

Bake at 400°F/204°C for approx 1 hour or until soft.

Step 4

While potatoes are baking, cook Bacon and break into small pieces.

Step 5

After potatoes are soft, cut length wise and gut.

Step 6

Mix all of the ingredients together and place back in the potato shell.

Step 7

Now its back into the Big Green Egg again at 400°F/204°C for 30 minutes.

Step 8

Remove and enjoy.
