Heat Big Green Egg up to 400°F/204°C.
Wash and coat with extra virgin olive oil and Kosher Salt then pop into the Big Green Egg.
Bake at 400°F/204°C for approx 1 hour or until soft.
While potatoes are baking, cook Bacon and break into small pieces.
After potatoes are soft, cut length wise and gut.
Mix all of the ingredients together and place back in the potato shell.
Now its back into the Big Green Egg again at 400°F/204°C for 30 minutes.
Remove and enjoy.
