Smoked Chili

This spicy chili recipe is a great spin on an old favorite!

Ingredients

  • 1 tablespoon (15 ml) Ancho Chile Powder 
  • 3 tablespoons (45 ml) Chili Powder 
  • 2-3 dried Chili Peppers (chipotle, ancho, etc.) to float on top 
  • 2 cups (480 ml) Beef Broth 
  • 1 cup (240 ml) Dry Red Wine 
  • 1 teaspoon (5 ml) dried Oregano 
  • 3 tablespoons (45 ml) your favorite Steak Rub 
  • 4 tablespoons (60 ml) Olive Oil 
  • 1 teaspoon (5 ml) Tabasco Sauce 
  • 1 1/2 lbs (0.7 kg) ground Chuck 
  • 1 lb (0.5 kg) Italian Sausage (casing removed) 
  • 2 cups (480 ml) Onion (chopped) 
  • Green Bell Pepper (seeded and chopped) 
  • Jalapeno Chiles (seeded and chopped fine) 
  • 1-2 Serrano Chiles (seeded amd chopped fine) 
  • Tbs Garlic (minced) 
  • 1 can (28 oz) diced tomatoes and liquid 
  • 1 can (16 oz) Diced Tomatoes and liquid 
  • 1 can (10 oz) Rotel 
  • 2 cans (16 oz) Pinto or Dark Kidney Beans (drained) 
  • 1 1/2 tablespoons (23 ml) ground Cumin 
  • 1 teaspoon (5 ml) Cocoa Powder 
  • 1 teaspoon (5 ml) ground Cinnamon 
  • Bay Leaves 
  •  Salt and fresh ground Pepper to taste

Instructions

Step 1

Set the EGG for indirect cooking with the convEGGtor at 350°F/176°C.

Step 2

Place dutch oven in the egg on the convEGGtor and add 2 Tbs. olive oil.

Step 3

Add the ground chuck and sausage (break up into smaller pieces with a wooden spoon).

Step 4

Add 2 or 3 fist-sized chunks of wood to coals.

Step 5

Close lid and cook for about 1 hour, stirring every 10-15 minutes.

Step 6

Remove dutch oven from egg, remove meat and drain on paper towels.

Step 7

Wipe dutch oven dry with paper towels.

Step 8

Return dutch oven to egg, add more olive oil and saute onions, green pepper, jalapenos, and Serrano pepper(s) until limp.

Step 9

Add garlic and continue cooking for 2-3 minutes.

Step 10

Add remaining ingredients and cook, uncovered, for about 2 hours (add water as needed to prevent drying).

Step 11

Note : After the mixture starts to simmer, you can reduce the dome temperature to 325°F/162°C. Remove bay leaves, dried chiles, correct seasoning and serve.
