Ingredients

Main

  • 2 racks pork ribs 
  • 1 cup (240 ml) apple juice 

BBQ Sauce

  • 1/2 teaspoons (2.5 ml) black pepper, coarsely ground 
  • 1/2 teaspoons (2.5 ml) sea salt 
  • 1 tablespoon (15 ml) tomato puree 
  • 1/2 cups (120 ml) honey 
  • 1/3 cups (80 ml) yellow mustard 
  • onion, finely chopped 
  • 2 tablespoons (30 ml) butter 
  • cloves garlic 
  • hot chilli, finely diced (leave the seeds for a hotter punch) 
  • 1 teaspoon (5 ml) onion powder 
  • 1/2 cups (120 ml) apple juice 
  • 1/2 cups (120 ml) cider vinegar 
  • 2 cups (480 ml) ketchup 
  • 2 tablespoons (30 ml) Worcestershire sauce 
  • 1 tablespoon (15 ml) hot chilli sauce 

Rub

  • 4 teaspoons (20 ml) sea salt 
  • 1 teaspoon (5 ml) garlic powder 
  • 2 teaspoons (10 ml) smoked paprika 
  • 1 teaspoon (5 ml) dried thyme 
  • 1 teaspoon (5 ml) chilli powder 
  • 1 teaspoon (5 ml) ground white pepper 
  • 2 teaspoons (10 ml) golden sugar

Instructions

Main

Step 1

Make up the rub, combine all of the ingredients.

Step 2

Coat the ribs with your rub. You wont use all of the rub, just enough to cover each side.

Step 3

Light your EGG and warm it up.

Step 4

Soak some wood chips and/or chunks in water for 15 mins. Apple or hickory work well.

Step 5

Add a good handful of chips or several chunks to your EGG, some in the middle, some further out across the charcoal.

Step 6

Set the EGG for indirect cooking with the convEGGtor at 230°F/110°C.

Step 7

Add your ribs.

Step 8

Smoke for 3 hours.

Step 9

Take your ribs off. Spray with apple juice and then wrap in foil.

Step 10

Cook for another 2 hours at 230°F/110°C.

Step 11

Unwrap your ribs and paint with the BBQ sauce.

Step 12

Put back on the EGG and cook for 1 hour, painting your ribs every 15 mins with sauce.

Step 13

Take your ribs off, wrap in foil and rest for 15 minutes.

Step 14

Serve!

BBQ Sauce

Step 1

Melt the butter and cook the onion, garlic and hot chilli.

Step 2

Once the onion is cooked add all the other ingredients and mix.

Step 3

Bring to a simmer then turn down to just heat the sauce through. Cook for 30 mins, the sauce will thicken nicely.

Step 4

Add more chilli sauce if you like it spicy.
