Grilled Portobello Mushrooms

These mushrooms can make a fabulous alternative to the burger for a vegetarian option or just for a change. They can also accompany a fine steak or serve on mixed greens for a delightfully delicious summertime meal.

Ingredients

  • 1 tablespoon (15 ml) cheese (optional) 
  •  chopped chives 
  •  drizzle of oil 
  •  pepper 
  • 2 teaspoons (10 ml) fresh thyme, finely chopped 
  •  salt 
  • clove garlic, finely chopped 
  • portobello mushrooms 

Instructions

Step 1

Remove stalk from Mushroom with sharp knife

Step 2

Clean the mushroom with a damp towel

Step 3

Sprinkle each mushroom with salt, pepper, thyme and garlic, cup side down

Step 4

Drizzle with oil

Step 5

Add cheese of your choice

Step 6

Cook for 6 minutes

Step 7

Cheese will have meted into the mushroom, the skin be brown and flesh meltingly soft

Step 8

Sprinkle with chopped chives before serving
