Ingredients

  • salmon filet 
  • 2 tablespoons (30 ml) Big Green Egg Citrus & Herb Seasoning or seasoning of your choice 
  • 1 tablespoon (15 ml) lemon zest 
  • 2 tablespoons (30 ml) brown sugar 
  • blood orange or other citrus fruit, cut into rounds 
  • 1 tablespoon (15 ml) chopped fresh parsley for garnish 

Instructions

Step 1

Set the EGG for direct cooking at 400°F/204°C.

Step 2

Soak the plank in water for at least 30 minutes. Cover the salmon in the seasoning, lemon zest and brown sugar; arrange the orange slices on top.

Step 3

Remove the plank from the water and place salmon onto plank then directly onto the cooking grid; close the EGG and cook for 15 minutes or until salmon reaches an internal temperature of 125°F/51°C for medium.

Step 4

Remove from the EGG and sprinkle fresh parsley to garnish.
