Beef Asparagus Stir Fry

Ingredients

  • 1 lb (0.5 kg) boneless beef short rib, sliced thin 
  • 1/2 cups (120 ml) soy sauce 
  • 1/4 cups (60 ml) oyster sauce 
  • 2 teaspoons (10 ml) corn starch 
  • 1 tablespoon (15 ml) rice wine vinegar 
  • cloves garlic, minced 
  • 2 tablespoons (30 ml) ginger, minced 
  • 2 tablespoons (30 ml) canola oil 
  • bunch of asparagus, cut in to 1 inch (3 cm) segments 
  •  Chopped green onion for garnish 

Instructions

Step 1

One day before the cook mix together the soy sauce, oyster sauce, corn starch, rice wine vinegar, garlic and ginger. Marinate the beef overnight in the mixture.

Step 2

Set the EGG for direct cooking at 500°F/260°C with the Carbon Steel Wok (close the bottom vent before adding the wok).

Step 3

Heat the canola oil in the wok. Add the marinated beef and stir fry. Once the sauce reduces and becomes a nice glaze, add the asparagus and stir fry until bright green.

Step 4

Serve over rice and garnish with chopped green onion.
