Smoked Bourbon-Soaked Cherries

Our Smoked Bourbon-Soaked Cherries make a quick and easy homemade gift. Use a sweet addition to a cheese platter or a tasty topping to ice cream.

Ingredients

  • 1 1/2 lbs (0.7 kg) sweet dark red cherries; stems removed and pitted (If you can’t find fresh cherries you can use frozen) 
  • 1/2 cups (120 ml) water 
  • 1/2 cups (120 ml) honey 
  • 1 teaspoon (5 ml) vanilla extract 
  • 1/2 teaspoons (2.5 ml) nutmeg 
  • cinnamon sticks 
  • strips of orange peel 
  • 1 cup (240 ml) bourbon 

Instructions

Step 1

Set aside four 8 oz. (229 g) mason jars.

Step 2

Set the EGG for direct cooking at 350°F/176°C.

Step 3

In a Stir-Fry & Paella Pan, whisk together the water, honey, vanilla extract and nutmeg. Gently stir in the cinnamon sticks and orange peel. Add in the cherries.

Step 4

Add to the EGG and cook, stirring occasionally, until the mixture begins to simmer. Close the top and bottom vents, and continue to cook for another 10 minutes for the flavors to meld. Remove from the EGG, strain out the cinnamon stick and orange peel; put one cinnamon stick and orange peel into each jar. Slowly add in the bourbon, and stir to combine.

Step 5

Divide the mixture evenly into the jars, allow the mixture cool completely to room temperature. Put the lids on the mason jars, turn upside down and refrigerate for at least 3 days before using. The cherries should last for up to 2-3 months if refrigerated.
