Chicken Rollups with Zesty Lemon Herb Sauce

4 boneless, skinless chicken breasts
8 slices of provolone cheese
8 slices of thinly sliced ham
1 tablespoon olive oil
Salt and pepper, to taste
Toothpicks (for securing the rollups)

Zesty Lemon Herb Sauce

1/4 cup freshly squeezed lemon juice
2 tablespoons olive oil
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh basil
1 teaspoon minced garlic
Salt and pepper, to taste

Step 1

Preheat your Big Green Egg grill. Set the EGG for direct cooking at 450°F/232°C.

Step 2

Take the chicken breasts and pound them to an even thickness of about 1/4 inch.

Step 3

Season both sides of the chicken breasts generously with salt and pepper.

Step 4

Grab a chicken breast and place it on a cutting board. Arrange 2 slices of provolone cheese and 2 slices of ham on top of the chicken breast.

Step 5

Carefully roll up the chicken breast tightly and secure it with toothpicks.

Step 6

Repeat the previous step for the remaining chicken breasts.

Step 7

Using a basting brush, lightly brush each chicken rollup with olive oil.

Step 8

Place the rollups on the preheated grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F/73°C.

Step 9

Once cooked, remove the rollups from the grill and let them rest for a few minutes.

After resting, carefully slice each rollup into 1-inch thick rounds.

Serve the zesty lemon herb sauce alongside the grilled chicken rollups.
