Ingredients

  • 4 tablespoons (60 ml) butter 
  • whole medium yellow onion, chopped 
  • cloves garlic, minced 
  • whole green pepper, diced 
  • stalks celery, diced 
  • 4 cups (960 ml) black-eyed peas, soaked at least 6 hours 
  • 5 cups (1200 ml) chicken broth 
  • ham hock 
  •  Salt and pepper, to taste 
  • 1/2 teaspoons (2.5 ml) cayenne pepper 
  • 1/2 teaspoons (2.5 ml) basil 
  • 1/4 teaspoons (1.3 ml) thyme 
  • 1/4 teaspoons (1.3 ml) oregano 
  • bay leaf 
  • 2 tablespoons (30 ml) white vinegar 
  • 4 cups (960 ml) white rice, cooked

Instructions

Step 1

Set the EGG for indirect cooking with the convEGGtor at 350°F/176°C.

Step 2

Heat butter in a Big Green Egg cast iron Dutch Oven. Add onion, garlic, green pepper, and celery. Cook for 5 minutes. Stir in soaked black-eyed peas, chicken broth, ham hock, salt and pepper, cayenne, basil, thyme, oregano and bay leaf. Cook for 30 minutes.

Step 3

Stir in vinegar. Serve over the cooked rice.

Step 4

Serves 10.
