  • 1 cup (240 ml) unsalted butter, melted 
  • 2 cups (480 ml) granulated sugar 
  • large eggs 
  • 2 teaspoons (10 ml) vanilla extract 
  • 1 cup (240 ml) all-purpose flour 
  • 1/2 cups (120 ml) unsweetened cocoa powder 
  • 1/2 teaspoons (2.5 ml) salt 
  • 1 cup (240 ml) chocolate chips 

Topping

  • 1 cup (240 ml) marshmallow fluff 
  •  Vegetable oil for brushing 

Sauce

  • 1 cup (240 ml) heavy cream 
  • 1 cup (240 ml) bittersweet chocolate chips 
  • 1 tablespoon (15 ml) unsalted butter 
  • 1 teaspoon (5 ml) smoked paprika 
  •  Pinch of salt 

Instructions

Main

Step 1

Preheat the EGG for indirect cooking with the convEGGtor at 450°F/232°C degreesF.

Step 2

In a large mixing bowl, combine the melted butter and granulated sugar. Mix until well combined and smooth.

Step 3

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 4

In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.

Step 5

Fold in the chocolate chips, ensuring they're evenly distributed throughout the batter.

Step 6

Pour the brownie batter into a greased and lined baking dish.

Step 7

Place the baking dish on the EGG and close the lid. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.

Remove the brownies from the EGG and let them cool in the baking dish for 10 minutes.

Preheat the EGG for direct cooking at 450°F/232°C degreesF.

Spoon the marshmallow fluff onto the oiled grid, shaping it into a rectangular shape, about 1/2-inch thick.

Step 4

Close the lid and grill the marshmallow fluff for about 2-3 minutes or until it turns golden brown and starts to bubble.

Step 5

Using a spatula, carefully flip the marshmallow fluff over and grill for an additional 2-3 minutes or until the other side is golden brown as well.

Step 6

Remove the grilled marshmallow fluff from the EGG and let it cool for a few minutes.

Step 7

Cut the grilled marshmallow fluff into squares or desired shapes.

Serve the warm grilled marshmallow fluff alongside the grilled brownies for a gooey and toasty topping combination. Enjoy!

Sauce

Step 1

In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer.

Remove the saucepan from the heat and add the bittersweet chocolate chips, unsalted butter, smoked paprika, and a pinch of salt.
